I’ve eaten there a dozen times, but each time I go I’m just blown away by how great the “Q” and the sauces are at Red State BBQ! Wow While I love every sauce, the one that keeps me coming back (and ordering a pint of it to take home) is the South Carolina Mustard.
I never thought, as a lifelong lover of Billy’s BBQ (sadly gone now) that I would say that. You see, Billy’s was a tradition in my family. My family came from Western Tennessee, Dyersburg to be exact. There was a restaurant there called “The Hut” that was simply AMAZING!. Billy’s came really close to The Hut. (The original “Billy” was Billy Parham, now how’s that for a coincidence?) Special times always found my family ordering a couple of pounds of Billy’s pulled pork and a pint of both their sauces. Yum!
Billy’s is gone, but thankfully Red State BBQ is here.
At Red State it’s really hard for me to deviate from the pulled pork, but let me tell ya – the double smoke brisket. THAT is heaven on a plate for sure. The BBQ baked beans and the beer cheese grits are perfect. Oh, and the chicken is… well, you get the idea, it’s ALL fantastic. By the way, I love mixing two or more of their sauces in a bite. Some wonderful variations!
So, not to disparage the other great “Q” served up in Central Kentucky, because there is a lot! I try to make the rounds to all of them with frequency.
But Red State BBQ… Yeah! It’s all that!
